Panera Bread, New Café Interior Concept

Scott Mitchem served as Vice President of Design & Concepts at Panera Bread, driving a full-scale design reboot of the Panera experience, part of a wider effort to refresh the brand.

The new concept design and development work was completed in December 2019, delivering Panera a fresh, relevant, and cohesive look and feel while resulting in an approximate 30 percent cost reduction per unit.

Mr. Mitchem focused on store design and all facets of new café concept development, including creative strategy, architecture, interior design, product development, supply chain systems, and construction. He also focused on improving all customer touch-points and key revenue drivers, providing strategic leadership to other areas of the business related to design.
